Ingredients

- 1 cup black eyed peas, cooked
- 1/2 onion, finely chopped
- 1/2 bell pepper, diced
- 1/4 cup cornmeal
- 1/4 cup flour
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- Oil for frying
Instructions
- In a bowl, mash the black eyed peas.
- Add onion, bell pepper, cornmeal, flour, cumin, paprika, salt, and pepper.
- Mix until well combined.
- Heat oil in a frying pan over medium heat.
- Shape the mixture into small patties.
- Fry the patties for 3-4 minutes on each side until golden brown.
- Drain on paper towels before serving.
Notes
- Serve with your favorite dipping sauce.
- Can add spices according to your taste.
- Store leftovers in the refrigerator.
