Crispy black-eyed pea fritters mixed with fresh greens.
Ingredients

- 1 cup black-eyed peas, soaked and cooked
- 1/2 cup chopped greens (spinach, kale, or collard greens)
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cornmeal
- Oil for frying
Instructions
- In a bowl, mash the cooked black-eyed peas.
- Add chopped greens, onion, garlic, cumin, salt, and pepper. Mix well.
- Stir in the cornmeal until the mixture holds together.
- Heat oil in a skillet over medium heat.
- Form the mixture into small patties and fry until golden brown, about 3-4 minutes per side.
- Drain on paper towels and serve warm.

- Adjust spices to taste.
- Serve with a dipping sauce of your choice.
