Description

A refreshing black-eyed pea salad also known as cowboy caviar.


Ingredients

  • 1 can black-eyed peas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or frozen
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine black-eyed peas, cherry tomatoes, corn, bell pepper, red onion, and cilantro.
  2. Add diced avocado.
  3. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

  • This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
