Instructions
- In a large bowl, combine black eyed peas, cherry tomatoes, cucumber, and red onion.
- Add Italian dressing and mix well.
- Stir in chopped parsley.
- Season with salt and pepper to taste.
- Chill in the refrigerator for 30 minutes before serving.
