A hearty and nutritious black eyed pea vegetable soup.
Ingredients

- 1 cup black eyed peas, soaked and drained
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5 minutes.
- Add garlic and cook for another minute.
- Add soaked black eyed peas, broth, diced tomatoes, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- Soak the black eyed peas overnight for best results.
- Adjust spices according to your taste.
- Add more vegetables if desired.
