This is a simple and hearty black eyed peas and collard greens recipe.
Ingredients

- 1 cup dried black eyed peas
- 4 cups collard greens, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 teaspoon red pepper flakes
Instructions
- Soak black eyed peas overnight in water.
- Drain and rinse the peas.
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add black eyed peas and vegetable broth, bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes.
- Add collard greens, salt, black pepper, and red pepper flakes.
- Simmer for another 20 minutes until greens are tender.
- Serve hot.
Notes
- Adjust seasoning to taste.
- Can add smoked meat for additional flavor.
- Store leftovers in the fridge for up to 3 days.
