This is a simple and hearty black eyed peas and collard greens recipe.


Ingredients

  • 1 cup dried black eyed peas
  • 4 cups collard greens, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon red pepper flakes

Instructions

  1. Soak black eyed peas overnight in water.
  2. Drain and rinse the peas.
  3. In a large pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add black eyed peas and vegetable broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 30 minutes.
  7. Add collard greens, salt, black pepper, and red pepper flakes.
  8. Simmer for another 20 minutes until greens are tender.
  9. Serve hot.

Notes

  • Adjust seasoning to taste.
  • Can add smoked meat for additional flavor.
