- 1 cup dried black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 4 cups collard greens, chopped
- 2 tablespoons olive oil
Instructions
- Rinse the black eyed peas and soak them overnight.
- In a pot, combine soaked peas and water. Bring to a boil.
- Reduce heat and simmer for 45 minutes or until tender.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add collard greens, salt, pepper, and smoked paprika. Cook until greens are wilted.
- Combine cooked peas with greens mixture. Stir well.
- Serve warm.
Notes
- Use fresh greens for better flavor.
- Adjust seasoning to taste.
- Can be served with cornbread.
