A hearty stew featuring black-eyed peas and greens.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups vegetable broth
- 2 cups collard greens, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 teaspoon thyme
- 1 bay leaf
- Salt to taste
- Pepper to taste
Instructions
- Rinse and soak black-eyed peas overnight.
- In a pot, sauté onion and garlic until fragrant.
- Add carrot and cook for 2 more minutes.
- Stir in soaked peas, vegetable broth, thyme, and bay leaf.
- Simmer for 45 minutes or until peas are tender.
- Add collard greens and cook for another 10 minutes.
- Season with salt and pepper before serving.
Notes
- Fresh or frozen greens can be used.
- Adjust seasoning to your preference.
- Serve with cornbread for a complete meal.
