Ingredients

  • 2 cups collard greens, chopped

  • 1 bay leaf

  • Pepper to taste

Instructions

  1. Rinse and soak black-eyed peas overnight.
  2. In a pot, sauté onion and garlic until fragrant.
  3. Add carrot and cook for 2 more minutes.
  4. Stir in soaked peas, vegetable broth, thyme, and bay leaf.
  5. Simmer for 45 minutes or until peas are tender.
  6. Add collard greens and cook for another 10 minutes.
  7. Season with salt and pepper before serving.
