- 1 cup black-eyed peas, soaked overnight
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups beef broth
Instructions
- Drain and rinse the soaked black-eyed peas.
- In a pot, brown the ground beef over medium heat.
- Add the chopped onion and minced garlic, cooking until softened.
- Stir in the diced tomatoes, black-eyed peas, cumin, paprika, salt, and pepper.
- Add the beef broth and bring to a boil.
- Reduce heat and simmer for 1 hour or until peas are tender.
- Serve hot.
