A hearty and flavorful black eyed peas and okra soup that warms you up.
Ingredients

- 1 cup black eyed peas, soaked
- 2 cups okra, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Soak black eyed peas overnight.
- In a pot, sauté onion, garlic, and bell pepper until soft.
- Add soaked black eyed peas, okra, broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper.
- Remove bay leaf before serving.

- This soup can be stored in the refrigerator for up to 3 days.
- Freeze leftovers for longer storage.
