- 1 cup black eyed peas
- 1 cup rice
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin

- 2 tablespoons olive oil
Instructions
- Soak black eyed peas overnight.
- Drain and rinse peas.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add black eyed peas, rice, and vegetable broth.
- Stir in cumin, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for about 30 minutes or until rice and peas are tender.
