- 2 cups fresh spinach

Instructions
- Rinse and soak the black eyed peas overnight.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic; sauté until soft.
- Add soaked black eyed peas, cumin, salt, and pepper.
- Pour in enough water to cover peas; bring to a boil.
- Reduce heat; simmer until peas are tender.
- Stir in fresh spinach; cook until wilted.
- Serve warm.
