Instructions

  1. Drain and rinse the soaked black eyed peas.
  2. Heat olive oil in a pot over medium heat.
  3. Add chopped onion and garlic; sauté until soft.
  4. Add diced tomatoes, cumin, salt, and pepper; cook for 5 minutes.
  5. Add black eyed peas and 4 cups of water; bring to a boil.
  6. Reduce heat and simmer for 45 minutes or until peas are tender.
  7. Garnish with fresh parsley and serve.
