A simple and hearty dish made with black eyed peas and tomatoes.
Ingredients

- 1 cup black eyed peas, soaked overnight
- 2 cups diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions
- Drain and rinse the soaked black eyed peas.
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic; sauté until soft.
- Add diced tomatoes, cumin, salt, and pepper; cook for 5 minutes.
- Add black eyed peas and 4 cups of water; bring to a boil.
- Reduce heat and simmer for 45 minutes or until peas are tender.
- Garnish with fresh parsley and serve.

- Adjust seasoning to your taste.
- Serve with rice or bread for a complete meal.
