A hearty and nutritious black eyed peas chicken soup.
Ingredients

- 1 cup black eyed peas
- 2 chicken breasts, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
Instructions
- Rinse and soak black eyed peas for at least 4 hours.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Sauté until softened.
- Add garlic and cook for 1 minute.
- Add diced chicken and cook until browned.
- Add soaked black eyed peas and chicken broth.
- Season with thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Check peas for tenderness and adjust seasoning if needed.
- Serve hot.
Notes
- For extra flavor, add bay leaves.
- Serve with crusty bread.
