  • 1 bay leaf

Instructions

  1. Rinse black-eyed peas under cold water.
  2. In a pot, combine black-eyed peas and water.
  3. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. In a separate pan, heat olive oil over medium heat.
  5. Add onion and garlic, sauté until soft.
  6. Add sautéed onion and garlic to the pot with black-eyed peas.
  7. Add salt, pepper, and bay leaf.
  8. Simmer for an additional 15 minutes.
  9. Remove bay leaf before serving.
