A hearty dish featuring black-eyed peas and ham.
Ingredients

- 1 cup dried black-eyed peas
- 1 cup diced ham
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
Instructions
- Soak the black-eyed peas overnight in water.
- Drain and rinse the peas.
- In a pot, sauté the onion and garlic until soft.
- Add the diced ham and cook for a few minutes.
- Add the black-eyed peas, chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Check for doneness and adjust seasoning as needed.
Notes
- For added flavor, use smoked ham.
- Serve with cornbread.
- Leftovers can be stored in the refrigerator for up to 3 days.
