Description
A hearty dish of black eyed peas cooked in a crock pot.
Ingredients

- 2 cups black eyed peas
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the black eyed peas and soak them overnight.
- Drain and add peas to the crock pot.
- Add vegetable broth, onion, garlic, carrot, celery, thyme, cumin, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or until peas are tender.
- Serve warm.

- Adjust seasoning to your taste.
- Great served with cornbread.
