A quick and easy recipe for cooking black-eyed peas in an instant pot.

- 1 cup black-eyed peas
- 4 cups water or broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 bay leaf
- Optional: diced tomatoes or greens
Instructions
- Rinse the black-eyed peas under cold water.
- Add all ingredients to the instant pot.
- Close the lid and set the valve to sealing.
- Cook on high pressure for 25 minutes.
- Allow natural pressure release for 10 minutes, then quick release the remaining pressure.
- Remove the bay leaf and serve hot.
Notes
- Soaking peas is not necessary but can reduce cooking time.
- Adjust seasoning to taste.
- Store leftovers in an airtight container in the fridge.
