Ingredients

  • 4 cups water or broth
  • 1 onion, chopped

  • 1 teaspoon paprika
  • 1 bay leaf

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. Add all ingredients to the instant pot.
  3. Close the lid and set the valve to sealing.
  4. Cook on high pressure for 25 minutes.
  5. Allow natural pressure release for 10 minutes, then quick release the remaining pressure.
  6. Remove the bay leaf and serve hot.

Notes

  • Soaking peas is not necessary but can reduce cooking time.
