Description
A simple and delicious black eyed peas recipe made in a pressure cooker.
Ingredients

- 1 cup dried black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
Instructions
- Rinse the black eyed peas under cold water.
- In the pressure cooker, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add black eyed peas, water, salt, pepper, and paprika.
- Close the lid and cook on high pressure for 15 minutes.
- Release pressure naturally for 10 minutes, then quick release any remaining pressure.
- Stir and serve hot.
Notes
- Soaking peas overnight reduces cooking time.
- Adjust seasoning as desired.
- Serve with rice or cornbread.
