- 1 cup dried black eyed peas
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 2 teaspoons cumin

- Pepper to taste
- 2 tablespoons olive oil
Instructions
- Soak black eyed peas in water overnight.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add soaked black eyed peas, vegetable broth, diced tomatoes, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Season with salt and pepper to taste.
- Serve hot.
