Ingredients

  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 bay leaf
  • 2 tablespoons olive oil

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. In a pot, combine peas and water. Bring to a boil.
  3. Reduce heat and simmer for 30 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion, garlic, and bell pepper. Sauté until soft.
  6. Add the sautéed mixture to the pot with peas.
  7. Add cayenne pepper, salt, black pepper, and bay leaf.
  8. Simmer for an additional 20 minutes.
  9. Remove bay leaf before serving.
