- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- In a large pot, combine peas and water. Bring to a boil.
- Add onion, garlic, salt, pepper, olive oil, and bay leaf.
- Reduce heat and simmer for 30-40 minutes until peas are tender.
- Remove bay leaf and serve warm.
Notes
- This dish is often served on New Year’s Day for prosperity.
- Black-eyed peas can be soaked overnight for quicker cooking.
- Feel free to add ham or bacon for extra flavor.
