Ingredients

- 1 ham hock
- 6 cups water
- 1 onion, chopped
- 2 cloves garlic, minced

- 1 tsp smoked paprika
- 2 bay leaves
Instructions
- Rinse the black eyed peas under cold water.
- In a large pot, combine black eyed peas, ham hock, and water.
- Add onion, garlic, salt, black pepper, smoked paprika, and bay leaves.
- Bring to a boil over medium-high heat.
- Reduce heat and simmer for 1 to 1.5 hours, or until peas are tender.
- Remove ham hock, shred the meat, and return it to the pot.
- Stir well and adjust seasoning if needed.
- Serve warm.

- Soaking peas overnight can reduce cooking time.
- Add vegetables like carrots or celery for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
