A hearty dish made with black eyed peas and salt pork.
Ingredients

- 1 cup black eyed peas
- 1/2 pound salt pork, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups water
- 1 teaspoon black pepper
- 1 bay leaf
Instructions
- Soak black eyed peas overnight.
- In a pot, add salt pork and cook until browned.
- Add onion and garlic, sauté until soft.
- Add soaked black eyed peas, water, black pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove bay leaf before serving.
Notes
- Adjust salt according to taste.
- Serve with cornbread for a complete meal.
