Instructions

  1. Soak black eyed peas overnight.
  2. In a pot, add salt pork and cook until browned.
  3. Add onion and garlic, sauté until soft.
  4. Add soaked black eyed peas, water, black pepper, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Remove bay leaf before serving.
