Ingredients

- 1 cup black eyed peas
- 2 cups fresh snaps
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 4 cups vegetable broth
Instructions
- Rinse the black eyed peas and soak them overnight.
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add soaked black eyed peas, fresh snaps, salt, pepper, and paprika.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 45 minutes or until peas are tender.
- Adjust seasoning to taste and serve hot.
Notes
- Soaking peas helps reduce cooking time.
- You can add other vegetables if desired.
- Leftovers can be stored in the fridge for up to three days.
