Ingredients

- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Rub the roast with olive oil, salt, and pepper.
- Mix garlic, rosemary, and thyme; spread over the roast.
- Place the roast bone-side down in a roasting pan.
- Roast in the oven for 15 minutes.
- Reduce the temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from the oven and let it rest for 20 minutes before slicing.
