Description
Buckeyes are delicious chocolate-covered peanut butter balls.
Ingredients

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable shortening
Instructions
- In a bowl, mix peanut butter and softened butter until smooth.
- Gradually add powdered sugar and mix until well combined.
- Roll the mixture into small balls and place on a baking sheet.
- Chill the balls in the refrigerator for at least 30 minutes.
- Melt chocolate chips and shortening in a bowl over simmering water.
- Dip each ball into the chocolate, leaving a small portion of the peanut butter exposed.
- Place back on the baking sheet and let set until chocolate hardens.
Notes
- Store in an airtight container.
- Use a toothpick for easier dipping.
- Try using crunchy peanut butter for a different texture.
