Buckeyes are chocolate-covered peanut butter balls that resemble the nut from the Ohio Buckeye tree.

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- In a bowl, mix peanut butter, softened butter, powdered sugar, and vanilla until smooth.
- Form the mixture into small balls and place them on a baking sheet.
- Chill the balls in the refrigerator for about 30 minutes.
- Melt the chocolate chips with vegetable oil in a microwave or double boiler until smooth.
- Dip each peanut butter ball into the chocolate, leaving a small part uncovered at the top.
- Return the dipped balls to the baking sheet and refrigerate until the chocolate hardens.

- Store in an airtight container in the fridge.
- Use a toothpick to dip the balls for easier handling.
