Description

Buckeyes are chocolate-covered peanut butter balls that resemble the nut from the Ohio Buckeye tree.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons vegetable oil

Instructions

  1. In a bowl, mix peanut butter, softened butter, powdered sugar, and vanilla until smooth.
  2. Form the mixture into small balls and place them on a baking sheet.
  3. Chill the balls in the refrigerator for about 30 minutes.
  4. Melt the chocolate chips with vegetable oil in a microwave or double boiler until smooth.
  5. Dip each peanut butter ball into the chocolate, leaving a small part uncovered at the top.
  6. Return the dipped balls to the baking sheet and refrigerate until the chocolate hardens.
