Buckeyes are a delicious chocolate and peanut butter treat resembling the nut of the Ohio buckeye tree.
Ingredients

- 2 cups powdered sugar
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 teaspoons vegetable oil
Instructions
- In a bowl, mix powdered sugar, peanut butter, softened butter, and vanilla until smooth.
- Form the mixture into small balls and place them on a baking sheet.
- Chill the balls in the refrigerator for about 30 minutes.
- Melt chocolate chips and vegetable oil in a bowl over simmering water.
- Dip each ball into the melted chocolate, leaving a small circle of peanut butter exposed on top.
- Place the dipped balls back on the baking sheet and chill until the chocolate sets.

- Store in an airtight container in the refrigerator.
- Use parchment paper on the baking sheet for easy cleanup.
