- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- In a bowl, mix peanut butter, softened butter, powdered sugar, and vanilla until smooth.
- Chill the mixture in the refrigerator for 30 minutes.
- Form the mixture into small balls and place them on a baking sheet.
- Insert toothpicks into each ball and freeze for 1 hour.
- In a double boiler, melt chocolate chips with vegetable oil.
- Dip each frozen ball into melted chocolate, leaving a small circle of peanut butter exposed.
- Place dipped buckeyes back on the baking sheet and chill until set.
Notes
- Use creamy peanut butter for best results.
- Store in an airtight container in the refrigerator.
- For a smoother chocolate coating, add more vegetable oil if needed.
