These butterfly royal icing cookies are a delightful treat for any occasion.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3 cups powdered sugar
- 2 tablespoons meringue powder
- 6–8 tablespoons water
- Food coloring (various colors)
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla, mixing well.
- In a separate bowl, combine flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until combined.
- Roll out the dough on a floured surface and cut into butterfly shapes.
- Place cookies on a baking sheet lined with parchment paper.
- Bake for 8-10 minutes or until edges are lightly golden.
- Let cool completely before decorating.
- In a bowl, combine powdered sugar, meringue powder, and water to make the royal icing.
- Divide icing into bowls and add food coloring as desired.
- Decorate cookies with colored icing and let dry completely.

- Royal icing can be made ahead of time and stored in the fridge.
