Description
A healthy and hearty dish featuring cabbage and black eyed peas.
Ingredients

- 1 medium head of cabbage, chopped
- 1 can (15 oz) black eyed peas, rinsed and drained
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup vegetable broth
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until translucent.
- Stir in minced garlic and cook for 1 minute.
- Add chopped cabbage, salt, and black pepper. Cook for 5 minutes.
- Mix in black eyed peas and paprika.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Serve warm.

- You can add other vegetables for more flavor.
