Ingredients

  • 1 can (15 oz) black eyed peas, rinsed and drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add chopped cabbage, salt, and black pepper. Cook for 5 minutes.
  5. Mix in black eyed peas and paprika.
  6. Pour in vegetable broth and bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
  8. Serve warm.
