A flavorful dish made with black-eyed peas seasoned with Cajun spices.
Ingredients

- 1 cup black-eyed peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon Cajun seasoning
- 2 cups vegetable broth
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Soak black-eyed peas overnight.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add soaked black-eyed peas and Cajun seasoning.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 30-40 minutes.
- Season with salt and black pepper to taste.
- Serve warm.

- Adjust the spice level by adding more or less Cajun seasoning.
