Instructions

  1. Soak black-eyed peas overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion, garlic, and bell pepper. Sauté until soft.
  4. Add soaked black-eyed peas and Cajun seasoning.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 30-40 minutes.
  7. Season with salt and black pepper to taste.
