- 4 cups water

- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic. Sauté until onion is translucent.
- Add black-eyed peas, water, salt, pepper, paprika, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for about 1 hour or until peas are tender.
- Remove bay leaf before serving.
