These candy cane cookies are festive and delicious, decorated with royal icing for a holiday touch.

- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon peppermint extract

- 1/2 cup crushed candy canes
- 2 cups royal icing
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix flour, baking soda, and salt.
- In another bowl, cream together butter and sugar until smooth.
- Add egg, peppermint extract, and vanilla extract to the butter mixture and blend well.
- Gradually add the dry ingredients to the wet ingredients.
- Fold in crushed candy canes.
- Drop rounded teaspoonfuls of dough onto ungreased cookie sheets.
- Bake for 8 to 10 minutes, or until lightly golden.
- Let cookies cool completely before icing.
- Decorate with royal icing as desired.
