Ingredients

- 2 cans black eyed peas, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add canned tomatoes and cook for 2 minutes.
- Add black eyed peas, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot.

- Can add chopped spinach for extra nutrition.
