A simple and hearty recipe for southern-style canned black eyed peas.
Ingredients

- 2 cans black eyed peas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 2 cups vegetable broth
- 1 tablespoon apple cider vinegar
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and cook for 1 minute.
- Add drained black eyed peas, salt, black pepper, and cayenne pepper.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in apple cider vinegar and parsley before serving.
Notes
- Serve with cornbread for a complete meal.
- Adjust spices according to taste.
- Can be stored in the refrigerator for up to 3 days.
