  • 1 tablespoon apple cider vinegar
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add drained black eyed peas, salt, black pepper, and cayenne pepper.
  5. Pour in vegetable broth and bring to a boil.
