Description

Canning Hoppin’ John is a great way to preserve this classic southern dish for future meals.


Ingredients

  • 1 cup dried black-eyed peas
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 bay leaf
  • Salt to taste

Instructions

  1. Rinse and soak black-eyed peas overnight.
  2. In a large pot, sauté onion, bell pepper, celery, and garlic until soft.
  3. Add soaked peas, chicken broth, thyme, black pepper, bay leaf, and salt.
  4. Bring to a boil, then reduce heat and simmer for 1 hour.
  5. Remove bay leaf and ladle mixture into sterilized jars.
  6. Process jars in a pressure canner for 75 minutes.
  7. Let jars cool and check seals.
