Ingredients

- 1 cup dried black-eyed peas
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 1 cup chopped celery
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 1 bay leaf
- Salt to taste
Instructions
- Rinse and soak black-eyed peas overnight.
- In a large pot, sauté onion, bell pepper, celery, and garlic until soft.
- Add soaked peas, chicken broth, thyme, black pepper, bay leaf, and salt.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove bay leaf and ladle mixture into sterilized jars.
- Process jars in a pressure canner for 75 minutes.
- Let jars cool and check seals.

- Ensure jars are sterilized before use.

- Store sealed jars in a cool, dark place.
