Description

Ingredients

  • 1 cup dried black-eyed peas
  • 1 cup long-grain rice
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon olive oil

Instructions

  1. Soak black-eyed peas overnight.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil and sauté onion and garlic.
  4. Add peas, water, thyme, salt, pepper, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Add rice and cook for 20 minutes until rice is tender.
  7. Remove bay leaf and serve.

Notes

  • Adjust seasoning to taste.
  • Store leftovers in an airtight container.
