Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, cream softened butter and sugar until smooth.
  4. Add eggs, milk, vanilla extract, and peppermint extract to the butter mixture.
  5. Combine the wet and dry ingredients until smooth.
  6. Fill cupcake liners with batter, about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • Store cupcakes in an airtight container.
  • For extra flavor, add crushed peppermint candies on top.
