Ingredients

  • 1 cup black-eyed peas, dried
  • 4 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Black pepper to taste
  • 1 jalapeño, chopped (optional)

Instructions

  1. Soak the black-eyed peas overnight in water.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until translucent.
  5. Add bell pepper and cook for 3 minutes.
  6. Add the soaked black-eyed peas, diced tomatoes, cumin, chili powder, salt, and pepper.
  7. Add 4 cups of water and bring to a boil.
  8. Reduce heat, cover, and simmer for 45 minutes or until peas are tender.
  9. If using, stir in jalapeño for extra spice.
  10. Serve hot with rice or bread.

Notes

  • Adjust spice level by adding more or less chili powder.
  • Serve with fresh cilantro for added flavor.
