Instructions

  1. Rinse the black-eyed peas and soak them overnight in water.
  2. Drain and rinse the peas again.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until softened.
  5. Add the soaked peas, water, salt, pepper, and bay leaf.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 1 hour or until peas are tender.
  8. Remove bay leaf and serve hot.
