A collection of simple and nutritious meals suitable for the Daniel Fast.
Ingredients
Scale
- 2 cups of quinoa
- 1 can of black beans, rinsed
- 1 cup of corn
- 1 bell pepper, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and 4 cups of water. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until water is absorbed.
- In a pan, heat oil and sauté onion and garlic until fragrant.
- Add bell pepper and cook for another 5 minutes.
- Stir in black beans, corn, cumin, chili powder, and salt.
- Mix in cooked quinoa and stir well.
- Garnish with fresh cilantro before serving.
Notes
- This dish is filling and packed with protein.
- You can substitute any vegetables you prefer.
- Store leftovers in the fridge for up to 3 days.
