Ingredients

  • 1 can of black beans, rinsed
  • 1 cup of corn
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and 4 cups of water. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until water is absorbed.
  4. In a pan, heat oil and sauté onion and garlic until fragrant.
  5. Add bell pepper and cook for another 5 minutes.
  6. Stir in black beans, corn, cumin, chili powder, and salt.
  7. Mix in cooked quinoa and stir well.
  8. Garnish with fresh cilantro before serving.
