Instructions

  1. Drain and rinse the soaked black-eyed peas.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion, garlic, bell pepper, and celery. Sauté until softened.
  4. Stir in Creole seasoning and cook for 1 minute.
  5. Add black-eyed peas, vegetable broth, and bay leaf.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 45-60 minutes, until peas are tender.
  8. Season with salt and pepper before serving.
