A simple and hearty dish made with black-eyed peas cooked in a crockpot.
Ingredients

- 1 pound dried black-eyed peas
- 6 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 bay leaf
- 2 carrots, diced
- 1 celery stalk, diced
Instructions
- Rinse the black-eyed peas and remove any debris.
- In the crockpot, combine the black-eyed peas, water, onion, garlic, salt, pepper, paprika, bay leaf, carrots, and celery.
- Stir to mix all the ingredients.
- Cover and cook on low for 8 hours or until peas are tender.
- Remove the bay leaf before serving.
Notes
- Soaking the peas overnight can reduce cooking time.
- Add ham or bacon for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
