Ingredients

- 1 cup brown rice
- 1 can black beans, rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 avocado, sliced
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the brown rice according to package instructions.
- In a pan, combine black beans, corn, bell pepper, cumin, chili powder, salt, and pepper.
- Heat the mixture over medium heat until warmed through.
- In a bowl, layer the cooked rice, bean mixture, and salsa.
- Add avocado slices on top.
- Serve warm.
