- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn
- 1 bell pepper, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, sauté onion and garlic until soft.
- Add bell pepper, black beans, and corn to the skillet. Cook for 5 minutes.
- Stir in cooked quinoa, cumin, paprika, salt, and pepper.
- Serve warm.
