Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained
  • 1 red bell pepper, chopped
  • 1 cup corn, frozen or canned
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add bell pepper and corn, sauté for 5 minutes.
  6. Stir in black beans and cumin, cook for another 3 minutes.
  7. Fluff quinoa with a fork and mix in the vegetable mixture.
  8. Season with salt and pepper to taste.

  • Store leftovers in the fridge for up to 3 days.
