Description

A nutritious and hearty dish made with dried black-eyed peas.


Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Rinse the dried black-eyed peas under cold water.
  2. Soak the peas in water overnight or for at least 6 hours.
  3. Drain and rinse the peas again.
  4. In a pot, heat the olive oil over medium heat.
  5. Add the chopped onion and sauté until translucent.
  6. Add the minced garlic and cook for 1 minute.
  7. Add the soaked peas, water, salt, and black pepper.
  8. Bring to a boil, then reduce heat and simmer for 30-40 minutes until tender.
  9. Serve warm.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
