Description
A nutritious and hearty dish made with dried black-eyed peas.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Rinse the dried black-eyed peas under cold water.
- Soak the peas in water overnight or for at least 6 hours.
- Drain and rinse the peas again.
- In a pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for 1 minute.
- Add the soaked peas, water, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until tender.
- Serve warm.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This dish can be frozen for up to 2 months.
- Adjust seasoning to taste.
