- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- Rinse the black-eyed peas and remove any debris.
- Set the instant pot to sauté mode and heat the olive oil.
- Add the chopped onion and garlic, cooking until soft.
- Add the black-eyed peas, water, salt, and pepper to the pot.
- Close the lid and set the pot to high pressure for 15 minutes.
- Allow the pressure to release naturally for 10 minutes.
- Quick release any remaining pressure and serve.
Notes
- Soak peas overnight for a shorter cooking time.
- Adjust seasoning to taste.
- Store leftovers in the refrigerator for up to 3 days.
